How to Make Strawberry Simple Syrup
To make the simple syrup, combine the strawberries, sugar, and water into a medium saucepan over medium heat. Bring the mixture to a simmer, stirring occasionally, then cook for about 10 minutes until the strawberries are soft, the sugar is dissolved, and the liquid has a nice ruby hue.
Remove the pan from the heat and allow the syrup to cool slightly, then strain it through a fine mesh sieve into a clean jar or bottle. The syrup will keep in the fridge for up to 3 weeks.
Let the strawberries simmer for about 10 minutes until they're nice and soft.
When the simple syrup is a nice ruby color, let it cool down before straining.
You can use this in a cocktail mix, pour it over your dessert, or really anything that needs an extra dose of sweetness and viscosity.

If you've had this cocktail mix before, you know its very citrus forward thanks to the Mexican limes, but has a strawberry puree to add a nuanced sweetness. Adding an extra tablespoon or two of strawberry flavored simple syrup adds thicker mouthfeel to this margarita cocktail, as well as an extra strawberry punch. 👊
